- MERCHANT GOURMET® Olive oil, for frying
- 2 onions , finely sliced
- 4 garlic cloves , finely diced
- 4 grilling chorizo sausages, sliced
- 4 large potatoes, peeled and diced
- 1 ¾ Lt chicken stock
- 200g curly kale
- 1 Red chilli, deseeded and diced
- Heat some oil in a large saucepan. Add the onions, garlic, chilli and chorizo and cook until soft.
- Add the potatoes and saute for a minute.
- Pour in the stock and bring to the boil. Cook until the potatoes start to break up into the soup.
- Add the kale and cook until tender. Ladle the soup into bowls, then serve drizzled of olive oil.
