Hot & Sour Soup with Mixed GrainsCooking time: 2 minutes

  • 250g of Merchant Gourmet mixed grains
  • 25g dried shittake mushrooms (or use Merchant Gourmet dried porcini or dried mixed mushrooms), rehydrated in 500ml water, with mushroom stock set aside
  • 1 red chilli, sliced
  • Thumb of fresh ginger, chopped
  • 1 spring onion, sliced
  • 50ml spiced black rice vinegar
  • 15ml white wine vinegar
  • 15ml soy sauce
  • 2ml vegetable oil


  1. Fry off the chilli and ginger in hot vegetable oil for 30 seconds
  2. Add the rehydrated shittake mushrooms and fry for a further 30 seconds
  3. Pour in the spiced black rice vinegar, white wine vinegar, soy sauce and mushroom stock and boil for 1 minute
  4. Add the mixed grains and continue to boil for another 30 seconds
  5. Serve with sliced spring onion
