  • 500g of prawns
  • 3 to 4 tbsp Merchant Gourmet garlic infused olive oil
  • 1 1/2 tbsp dried of thyme
  • 50g spring onion
  • 100g tomatoes
  • 200g cups Merchant Gourmet polenta
  • 1 chilli
  • 50g rocket
  • 1 tbsp  lime juice
  • 100g Parmesan cheese shredded
  • 1 tbsp freshly ground black pepper
  • 1 tbsp all purpose seasoning


  1. Fry prawns in a pan with onions and chilli for 5 mins
  2. Place prawns in blender with thyme and lime juice, then blend till a smooth paste
  3. Mix one cup of water with the polenta, then add in prawn paste and mix till soft and fluffy
  4. Mix in the black pepper and all purpose seasoning to taste
  5. Scoop table spoons size portions into frying pan and cook till golden brown, then top with tomato, parmesan and rocket to serve
