Peru Salad

Cooking time: 1hr 15 minutes
Serves: 4

Ingredients:

  • 1kg Cooked Merchant Gourmet Giant Cous Cous
  • Red Pepper
  • Yellow Pepper
  • Orange Pepper
  • Head of Pak Choi
  • Large Carrots
  • Red Onions
  • Red Chilli
  • Limes
  • 10g Sugar
  • Seasoning

Method:

  1. Cook the cous cous as per the instructions and leave to cool.
  2. On a mandolin slice all of the vegetables a s fine as possible and soak in the lime zest, juice, sugar for 5 minutes and season. Leave to marinade overnight.
  3. Add the cous cous to the vegetable mix and allow to infuse for an hour and then serve.
