Serves: 4

Ingredients:

  • 6 Sweet peppers, (a mixture of red, green & yellow)
  • 1 large onion
  • 1 sachet fajita seasoning mix
  • 8 tortilla wraps
  • 250g Merchant Gourmet ready to eat Beluga® lentils
  • 10 SunBlush® tomatoes
  • 3 tbsp oil for frying
  • 200-300g Tomato salsa (the fresh salsa near dips in the supermarket is best)
  • 230g fresh guacamole
  • 150ml soured cream
  • 200g cheddar cheese, grated

Method:

  1. Slice the peppers and onion into strips with about a 2 cm width.
  2. Over a high heat, heat the oil in a wok or large frying pan for 1 minute
  3. Add the vegetable to the hot pan and fry for a few minutes, continuously stirring, until slightly soft
  4. Add the beluga lentils, fajita seasoning and SunBlush® tomatoes and fry for another 3 minutes, continuously stirring
  5. Meanwhile heat the wraps according to instructions on pack
  6. Take your pepper and lentil mix to the table along with the heated wraps, avocado, soured cream, grated cheese and salsa, and tuck in!
