Ingredients:

  • 2 chicken breasts, sliced
  • 250g fresh egg noodles
  • 2 avocado halves, sliced
  • 1 chilli, sliced
  • 2 cloves garlic
  • 2 tablespoon ginger, minced
  • 100g watercress
  • 2 tablespoons white sesame seeds
  • Soy sauce
  • Roasted sesame oil
  • Vegetable oil, for frying

Method:

  1. Add a little vegetable oil to a wok on the highest heat and stir fry the chicken slices until browned.
  2. Add the garlic, ginger and chilli and fry for 10 seconds before adding the noodles and avocado slices.
  3. Add a dash of soy sauce and fry for another minute, constantly moving the ingredients about in the wok.
  4. Before serving, add the watercress, drizzle a little sesame oil over the noodles and sprinkle with sesame seeds.
  5. Serve.
