Asparagus and Serrano 1Cooking time: 20 minutes
Serves: 1


  • 4 spears of asparagus
  • 2 slices of Charcuti® Serrano ham, cut in half
  • 10 ml Merchant Gourmet lemon infused olive oil
  • 1/2 tspn salt
  • Mixed leaf and salad garnish


  1. Bring a pan of water to the boil and add salt
  2. Blanch the asparagus spears in the boiling water for 4 minutes
  3. Once tender, take the asparagus out and place in a bowl of ice cold water for 1 minute, then remove and drain
  4. Once the spears are dry, wrap a Serrano ham slice around each of the asparagus spears
  5. place under the grill until the asparagus is warm and the outside or the Serrano ham starts to crisp up
  6. Prepare the salad, adding the asparagus and Serrano ham
  7. Drizzle over the lemon infused olive oil and serve
