Ingredients:

  • 240g SunBlush® tomatoes, marinade drained
  • Half a white onion, chopped
  • 1 clove garlic, skin removed
  • 1 beef tomato (or two smaller tomatoes) chopped
  • Half a cucumber, chopped
  • 500ml cold water
  • To garnish: crutons – bread cut into tiny squares and fried in oil, chopped yellow & green peppers

Method:

  1. Add the dry soup ingredients to a food processor / blender and blitz for a few minutes until smooth, graduly adding the cold water
  2. Strain the soup mixture through a fine sieve and transfer the liquid to the fridge to chill for 2 hours
  3. Serve chilled with choice of garnishes on the side
