Chicken with Ras el Hanout A

Ingredients

  • 4 chicken quarters
  • 1 orange sliced into 4
  • 1 bulb of garlic halved
  • 1 fennel whole, chopped
  • 50g of grilled aubergine, sliced
  • 50g grilled red onion, chopped
  • 50g of almonds
  • 30g pine nuts
  • 180g Roquito® pearls
  • 5g Ras el hanout
  • 100g Merchant Gourmet fire roasted red peppers
  • Salt and pepper

Method:

  1.  Place the fennel, halved garlic and orange into a heavy based pan cook for 2 minutes over a medium heat
  2. Meanwhile season the underside of the chicken with ras el hanout, salt and a little pepper
  3. Place the chicken thighs into pan skin side up, season again as above
  4. Add the aubergine, add the red peppers, pine nuts, orange and almonds
  5. Finally add the Roquito® pearls, place in the oven at 180C for 15 minutes or until the chicken is cooked and serve
