Eggs and beans A2

Serves: 2
Cooking time: 30 minutes

Ingredients:

  • 1 tbs oil
  • ½ small onion, diced
  • 1 clove garlic, chopped
  • ½ tspn cumin, toasted and ground
  • ½ tspn chipotle chili powder
  • 20g Roquito® pepeprs, diced
  • 200g chopped tomatoes
  • 200g black beans, rinsed and drained
  • 1 tspn oregano
  • salt and pepper to taste
  • 1 egg

Method:

  1. Heat the oil in a pan over medium heat
  2. Add the onions and saute for about 5-7 minutes
  3. Add the garlic, cumin, chipotle chili powder, and jalapeno saute for 2 minutes
  4. Add the tomatoes, black beans, oregano, salt and pepper and bring to a boil
  5. Reduce heat and simmer for 20 minutes
  6. Place the poached egg on top of the sauce
  7. Bake in a preheated oven at 150˚C for 2 minutes
  8. Season to taste
