  • 1 cooked maize fed chicken breast
  • 1tsp thai green basil curry paste + 1tsp plain oil
  • 50g organic basmati rice
  • 50ml water
  • 50ml coconut milk
  • Strips of cucumber
  • A few sprigs of coriander
  • 1tbsp black rice vinegar
  • 1tbsp basil oil
  • A squeeze of lime


  1. Mix together the Curry paste and plain oil and rub over the chicken breast. Leave to marinate
  2. Cook the rice until tender and dry in the water and coconut milk with a pinch of salt
  3. Mix together the Basil Oil, Rice Vinegar and Lime juice to make a simple vinaigrette
  4. Chargrill the Chicken until cooked through. Slice at an angle and arrange on the plate
  5. Dress the Cucumber and Coriander with most of the vinaigrette. Arrange on the plate with the chicken and rice. Finish with the remaining vinaigrette.
