Quinoa, edamame beans roquito peppers amended

Serves: 2
Cooking time: 20 minutes

Ingredients:

  • 250g Merchant Gourmet quinoa
  • 1 tbsn sliced Roquito® peppers
  • 20g edamame beans, podded
  • 1 avocado, sliced
  • 1 handful of coriander
  • 1 small red onion, sliced
  • 20g black eyed beans
  • 2 tbsn Merchant Gourmet infused chilli oil
  • Juice and zest of one lemon

 Method:

  1. Heat 1 tbs of the oil in a wok or frying pan, add the edamame beans, season with a little Salt and fry for 2-3 minutes or until they begin to soften. Transfer to a bowl and allow to cool, add the red onion and black eye beans, cover and refrigerate, until chilled.
  2. Mix the rest of the ingredients apart from the coriander into the large bowl with the edamame beans
  3. Sprinkle the coriander and zest of lemon and over the top to garnish and serve
