- Handful of salad leaves
- 5 cherry tomatoes, halved
- 1 lemon
- 2 x la Fresca avocado halves
- Dijon mustard
- White wine vinegar
- Merchant Gourmet lemon infused extra virgin olive oil
- Make the dressing by whisking the mustard, vinegar and oil together, along with 1tsp water. Season well.
- Slice the avocado halves into strips and place with the salad leaves in a large bowl, then use your hands to toss the dressing through. Add the cherry tomatoes
- Season with paprika and a squeeze of lemon juice and serve.
