  • Handful of salad leaves
  • 5 cherry tomatoes, halved
  • 1 lemon
  • 2 x la Fresca avocado halves
  • Paprika
  • Dijon mustard
  • White wine vinegar
  • Merchant Gourmet lemon infused extra virgin olive oil


  1. Make the dressing by whisking the mustard, vinegar and oil together, along with 1tsp water. Season well.
  2. Slice the avocado halves into strips and place with the salad leaves in a large bowl, then use your hands to toss the dressing through. Add the cherry tomatoes
  3. Season with paprika and a squeeze of lemon juice and serve.
