A quick and healthy recipe that gives Peruvian ceviche is the Merchant Gourmet treatment with lime-cooked prawns served with Mixed Grains, chilli and sweetcorn.

Serves: 2

Cooking time: 10 minutes


  •  125g Merchant Gourmet Mixed Grains
  • 100ml Lime juice
  • 10 raw king prawns, with vein removed
  • Small can of sweetcorn, drained
  • Handful of coriander, leaves picked
  • 1 Red chilli, sliced
  • 1 Red onion, sliced
  1. Pour the lime juice into a shallow dish and add the raw king prawns, red onion and chilli. Set aside for 5 minutes
  2. The lime juice ‘cooks’ the prawns and after 5 minutes they turn pink
  3. Arrange piles of Mixed Grains on a plate and top with some sweetcorn, coriander, red chilli and the king prawns
