Eggs and Rosti A5

Serves 2

INGREDIENTS

1 x Potato rosti roll, 4 slices about 2 cm thick

4 x Bacon rashers

2 x Beef tomatoes, sliced

2 x Poached eggs

Basil infused extra virgin olive oil

100g x Rocket

METHOD

  1. Pre-heat your grill
  2. Brush your tomatoes with basil infused extra virgin olive oil
  3. Grill your bacon and tomatoes
  4. Heat a frying pan to a medium heat with a thin layer of oil, fry the rosti turning occasionally for 5 minutes
  5. Bring a pan of water to a gentle simmer, then put the eggs in for 30 seconds.
  6. Place a small amount of rocket on a plate, then top with rosti, bacon, tomato and then top with the poached egg.
