Ingredients

  • 8 x 8.5 cm Quiche cases
  • 200g x 10 mm diced onion
  • 250g SunBlush® Red and Yellow cherry tomatoes
  • 1 tablespoon of SunBlush® Tomatade®
  • ½ teaspoon of salt
  • ¼ teaspoon black pepper
  • 250 ml whole egg
  • 50ml egg yolks
  • 40 Grated Grana Padano

Method

  1. In a large nonstick skillet, heat oil over medium heat. Add onion and cook until soft, about 5 minutes. Add half the cherry tomatoes, tomato paste, salt and pepper; cook, stirring, until thick, 15 to 20 minutes.
  2. Transfer to a bowl and let cool to room temperature, about 25 minutes. Mix together the liquid egg, egg yolk, grana padano and Tomatade®.
  3. Spread tomato mixture over the base of the of the quiche case then add quiche mix, after 12 minutes top with the remaining cherry tomatoes. Bake for an additional 3 minutes.
